O que é o ciauscolo

Além disso, a moagem muito fina da carne contribui para criar essa consistência delicada.
Por isso, o ciauscolo se tornou conhecido como o salame cremoso das Marche.
Na preparação o lardo é moído junto com a carne de porco, formando uma pasta homogênea, cremosa para espalhar no pão. Essa técnica prevê de duas a três moídas sucessivas do composto.
